Fiske Bolder (Fish Balls)
2 1/2 cups of potatoes
2 cups halibut (cut into chunks)
1 egg (may need 2)
1/2 tablespoon butter or olive oil
Salt and pepper to taste
You can also add garlic, parsley or any favorite seasoning you can be as creative as you like!
Cook halibut and potatoes together, then drain very dry (save water for white sauce).
Add butter, seasoning and beaten egg and mix.
Roll into balls (golf ball size) and drop into hot fat or oil. Deep fry until golden brown (if it breaks up-add another egg). Olive oil in cast iron pan works well.
Make a white sauce using water, (from fish and potatoes), flour, butter and lemon.
